Found this on hutchings-xo blog today. This can easily be made Gluten Free too. 

Vegan Peanut butter cups
Ingredients:

10 graham crackers


3/4 -1 cup peanut butter


1/4 cup agave nectar syrup


1/4 cup soy milk


Earth balance butter


1 cup vegan chocolate chips

Blend graham crackers until powder like mixture. Put butter in a bowl and microwave for 30-50 seconds, add in peanut butter , agave and  3/4 cup graham crackers crumbs stir throughly. 
In another bowl place chocolate chips and soy milk together microwave for 50-60 seconds stir the melting chocolate chips and milk together to get a thick chocolate - i used more ingredients for this step to create the peanut butter cup effect.
pour chocolate mixture in each cupcake cup evenly, then peanut butter mixture and then more chocolate on top ; recipe creates 11-12 cups :) i put them in the freezer for an hour and there ready to eat ; but you can put them in the fridge for two hours if you have a time limit for being home. Enjoy
